旧情绵绵的传统美食 - 海南椰子糕, 红龟粿,Lontong 和 蒸金瓜糕


星期六auntie Irene在千呼万唤下,终于制作这让我期盼已久的海南椰子糯米糕了(海南人称它为"")!! 记得还没认识auntie Irene 之前, 像很多人一样,在厨房笔记的blog和她交流, 曾问她能否教海南椰子糯米糕, 她却不晓是什么东东,回应不会做. 后来认识她后, 她告诉我也是海南人的粉樱尝试画出来和形容口感样子, 但是auntie Irene因为没吃过也没看过,还是没有头绪. 有一天我特地在午餐来回走了三十分钟到美芝路海南二街的餐室买了一盒薏粑送给她品尝. 可是她并不会欣赏它的口感和馅料, 还觉得难以下咽呢!我很纳闷,因为这从小熟悉的古早糕点是我和家人喜爱的,同事们尝过也都很喜欢的糕点,她却不以为然。。。

之后有几位听众在部落格要求, 但是她也没考虑做她不喜欢吃的糕点。最近有一位97.2 听众在blog要求要做这椰子糕给没有食欲的她母亲吃, auntie Irene 被她的孝心感动, 决定尝试做做看。打了电话详细问我这个海南糕点的特点和馅料有哪些, 再凭之前尝过的口感和想像, 在星期六一起研制这个改良的海南椰子糯米糕,第一次的尝试就把味道做对了,还真不是盖的哟!

椰不成糕海南糕点有著这样的说法, 那里绝大部分的糕点都是蒸制而成, 油炸的较少. 因为海南岛也是热带地段, 到处是椰林, 糕点的材料也是就地取材,多数是椰制糕点, 椰香必不可少。


把搓软的糯米面团揉搓成小团,用手按压成扁圆形, 裹上由椰丝, 花生末、碎芝麻、和红糖或椰糖等制成的丰富口感的甜馅料, 然后把它蒸熟...趁温热吃,皮较绵软,口感最棒。当然外面包的椰叶或香兰叶散发的香味也许更能够提起人的食欲,浸着糯米的柔和着椰丝和花生的香, 椰味十足,粘韧适中,别具特色….咬开的当儿, 浓郁的椰香立即在嘴里弥漫开来, 呣… 太好吃了.!


这就是我,DS 和 auntie Irene 做的两种口感不同的糯米糕点了。 想尝试制作海南椰子糕的话,就要留意这个星期一和二的厨房笔记咯!
这次我们的红番薯红龟粿, 馅料除了有花生,我们也做了炒香的椰糖椰子丝,香甜多汁,好吃也!


这是auntie Irene, L-5, Nicole 和我星期天的晚餐了 - 马来人的美食之一 Lontong!Auntie Irene 调配,Nicole 炒的mixed vegetable curry 汤料让我们吃香喝辣,大快朵颐!



这就是我的Lotong 晚餐了,非常的可口浓香,吃了满口留香,好吃!我们也做了一大份令L-5念念不忘,大家趋之若鹜的蒸金瓜糕


依然甜香无比,依然软绵的金瓜糕,太美味了,难怪让尝过的人对它欲罢不能。它成为我们星期一的早餐哟!

我看过海南薏粑,只是没有吃过。我到现在才知道里面的馅料。很山龟,是吗?嘻嘻!

红龟馃,Lontong 和蒸金瓜糕我都喜欢吃,的确受不了诱惑!

在周末里你们煮好多丰富的美食哟!吃得完吗?我也是山龟不曾看过海南椰子糯米糕。如果aunt Irene没告诉我你们在学做这海南薏粑,我还以为是菜包粿呢!觉得外形和颜色蛮相似,只是陷料不一样而已。你说得对!就像我所做菜包粿也是我从小熟悉的糕点也是我和家人喜爱的。

我的大嫂也是海南人,记得当时她生孩子庆祝满月时,她的家人做了很多的海南椰子糯米糕分给亲戚朋友,我虽然不是海南人,但是蛮喜欢吃海南馃,我也曾做过海南椰子糯米糕,不过只做过一次而已。
哈哈!
哇!红番薯红龟粿看了令人好想咬一口哟! 香喷喷的Lontong令人难以抗击!

其实我也蛮意外很多人从来没有尝过,还好你们起码有见过。看来山龟不只你一个哟。。。嘻嘻~~~
海南意粑的馅料的确很丰富也很香的,我们一家人超爱吃,因为现在不容易买到,我们逢见必买一些回家解馋。

是啊,上周末我们又有丰富的美食哟!还在慢慢吃,嘻嘻~~~原来你也是不曾看过海南椰子糯米糕的山龟哦。海南薏粑的外形很普通,确实像菜包粿呢!只是一个是甜糕点,一个是咸糕点。虽然外表不精致,但是却是我们从小熟悉的味道。你说的菜包粿在这里好像也是不普及。

我常常佩服古早的人在制作这些糕点时没有那么多厨具的辅助,却能做那么美味和令人回味无穷的味道和口感!我认为他们真的很用心,又时要做出当时的古早味,需要下一番功夫和不停的尝试。。。这次我们初次做意粑的馅料已经蛮对了。。。

说的没错!我也告诉auntie Irene 海南椰子糯米糕是海南人庆祝小孩子满月时,必准备的糕点之一,分送给亲朋戚友的礼饼。

红番薯红龟粿做得和金瓜的颜色相近,也一样好吃! Lontong的确香喷喷和令人难以抗拒!家人都说很美味,和外面售卖的有过之而无不及!

哈哈哈~~你不觉得它的馅料吃了满口留香吗? 没关系啦,也不能怪你,因为你之前从来没吃过,不习惯它综合多种香味和丰富口感,又有椰丝、花生、芝麻、姜味...对一些从小就尝过的人比较会对它念念不忘.

我拿给一位马来西亜籍的海南同事品尝...他告诉我他很久没有去美芝路买那里的海南糕点,好喜爱它带姜茸姜味的椰丝花生芝麻馅料...除了姜味不够外,我问它馅料味道像吗? 他说还不错叻...看他狼吞虎咽的吃相,看得出他很怀念和喜爱吃这糕点...

How's your eyes, did you went to see a doc? Is it the same as Nicole? By now I guess you have already recover from it lor. Hee hee you know me lah, I always slow 3 beats....mah....

OH oh, as I read through your blog, now then I saw Auntie Irene comments on the flavor of the kueh. Hee Hee I still thought of trying it, but now may think again.... :)

Not because of the ingredients but because i think i will become messy after doing it, hahahah...

Ya, I mad with you liao, now then you come here....hahaha....just kidding la...It's ok I somethimes also take ages to visit some other blogs or leave comments...hope all of you also don't take it to heart, I will visit whenever I have the time....secretly tell you hor, sometimes I did pay a visit in the wee hours after finished watching my tv programmes, but didn't leave comments, or else u all will know how late I stay up....

aiya, auntie Irene don't like doesn't mean it's not nice mah, think she just not used to the texture. One man's meat is another man's posion, who knows, like some of us, you may like this Hainanese kueh.
