这是我在<我的厨房笔记>学的蒸杂果蛋糕。 看上去似模似样好像是做成功了,但是不然。你们可别被它美丽的外表蒙骗,其实蛋糕发得不高,里面是半熟的, 哈哈哈!最后只能挑旁边和上面一些比较熟的部份吃,剩余的就得往垃圾桶里丢,唉呀呀...食物被我糟蹋了, 真罪过。做成后已经是半夜了,看到不熟,再放回去蒸多一下,但是蛋糕已经是回魂乏术,不熟就是不熟,唉...
后来请教了 auntie Irene, 分析失败的原因之一是我没有用22cm尺寸的baking tin!这是一个失败的例子,错误的示范,提醒你们可要照着食谱指示做,不要学我哦。。。呜呜。。。

I also made a Steam Mix Fruits Cake on sat nite, inside also not very 熟 also...

Auntie Irene said if not cooked need to extend the steaming time. This cake looks easy but not so easy after all, must get everything right. At first I also thought easy enough to just try on my own, but.... sigh...

補充﹕ 馬來西亞應該很難買到那些做蛋糕的器具﹐nicole 要去 phoon huat 賣﹐ 那以後回家就可以做了啦﹗
如果要用到烘爐的話﹐可能可以去阿姨家做﹗因為阿姨也很喜歡做糕餅﹗

喔,Mary,你一次过做了四大条French loaf,不错哦!你是不是要配咖哩鸡当一餐吃。我们用不发育的甜面包团做的baguette是纤瘦型的,哈哈哈!还好还蛮好吃的,味道独特,有知音人欣赏嘞(我的同事)哈哈!你用bread improver for crispy bread,那尖头面包皮是不是很脆。改次我也要试做这种真正脆皮带咸味的尖头面包。

When I saw the cake exterior so nice thought successful so happy only to find out when I cut it that inside it very moist. If I'm not wrong, also cannot overmix the batter.

Yeah, this recipe looks easy but its not and also take long time to steam.

Same here for me, when i first c everthing was all right, i was also very happy, i thought successful, but when it sink in the middle, i thought what happen, when cut, realised that the middle there it's not fully cooked...

Dun be so upset. Same as me, first time not successful, after auntie irene guilding me again, I won't gave up and tried second time. it let me made successful. Try one more time. Keep it up!!ok.

Ya, have learnt that most recipes must follow the procedure strictly, cannot anyhow alter the amount of ingredent, or will affect the end product. Auntie Irene alway emphasised that each ingredient has a part to play, like sugar aids in raising the cake, etc. Time control also very important too. 唉!我们经验不足,有时很难拿捏得准,不然就是一时大意或糊涂,反正就是要多多练习,熟能生巧,凡事要按部就班,所谓‘欲速则不达’嘛,我就常常犯操之过急的毛病,真是伤脑筋啊!哈哈!

Margaret , it is ok to know your mistake and make sure that your learnt from them.The next time must make sure you follow closly hor.
Do you know something, when I first learn from Auntie Irene always get scolding from her cos sometime never listen properly so you consider very good liao auntie irene seldom scold you all, but I sincerely thanks her for being so strict to me so that I will always remember her teaching and scolding.

Yea, I totally agree with what u said. 所谓‘严师出高徒’,难得auntie Irene 这么热心又有耐心和毫无保留的教导我们并指正错误,让我们铭记在心,虽然有时有时还是会犯不听话和自作聪明的毛病:p 她也是有常骂我们啊,嗬嗬!不过我是不会介意的,只是觉得自己有时真的很糊涂,很不好意思,常惹她老人家生气,唉。。Actually 她要求高我们才能学做出有水准的糕点。我会尽量学习auntie Irene师傅,你,Mary和一些烘焙爱好者的不屈不饶的精神!论勤劳我就比不上你们了,不过我会继续加油的,才不会辜负师傅的一片苦心!
